Zesty Avocado and Poached Egg on Toast!

This quick and healthy meal is everything you avo-wanted in a brunch!

Serves: 1 (£2 per portion)

Cooking & Prep Time: 10-15 minutes

Ingredients:

1 medium egg

1 avocado

5 cherry tomatoes

1 slice of brown seeded bread

1/2 lemon

Rock salt

Ground black pepper

Pinch of crushed chillies

Malt vinegar (optional for egg poaching)

Method:

  1. Add boiling water and a tsp of malt vinegar to a saucepan
  2. Mash the avocado
  3. Squeeze the lemon into the mashed avocado and stir
  4. Toast the bread (make sure it isn’t too soft- it tastes better crunchy!)
  5. Cut cherry tomatoes into ¼s
  6. Add cherry tomatoes and avocado mix onto the toast
  7. Poach egg and add on top
  8. Season with salt, pepper and crushed chilli flakes

Voila! A healthy, nutritious and delicious breakfast.
