Banana Bread!

A recipe for those who want to take their meat free day a step further, this dairy free banana bread is a real treat and a guaranteed crowd pleaser!

Serves: 8 (£0.77 per portion)

Cooking & Prep Time: 1 hour

Ingredients:

3 bananas

½ juice of a lemon

130ml non-dairy milk

100ml vegetable oil

150g brown sugar

300g all-purpose flour

1 tsp baking powder

1 tsp salt

1 tsp vanilla

Handful of blueberries

Method:

  1. Mash the bananas until they are in liquid form.
  2. Add lemon, non-dairy milk, oil, vanilla and brown sugar.
  3. In a separate bowl, add all the dry ingredients: Flour, baking powder and salt.
  4. Slowly stir the dry ingredients in with the mashed banana mixture.
  5. Mix well and add the blueberries.
  6. Bake the banana bread at 200oC for 45 minutes.
