Blissful Beetroot Risotto!
The ultimate comfort food that’s packed full of nutrients!
Serves: 4 (96p per serving)
Cooking and prep time: 10 minutes
Ingredients:
250g risotto (arborio rice)
3 garlic gloves (chopped)
1tbsp olive oil
2 vegetable stock cubes
1 beetroot (chopped finely)
2 bell peppers
1 handful of frozen peas
1 handful of baby spinach
1 lemon
1 onion (chopped)
Method:
- Fry the onions and peppers with olive oil in a pot at medium heat.
- Add the chopped garlic for a few minutes, then add the arborio rice.
- Add 2 stick cubes to 750ml of boiling water, then gradually add a ladle of stock to the risotto and keep stirring for about 25 minutes.
- Whilst stirring the risotto for 10 minutes, add the beetroot.
- Add the frozen peas and spinach when all the vegetable stock is absorbed and cook for a further few minutes.
- Take the pot off the heat and squeeze 1 lemon into the risotto and add salt and pepper for extra seasoning.
- Enjoy!
