Blissful Beetroot Risotto!

The ultimate comfort food that’s packed full of nutrients!

Serves: 4 (96p per serving)

Cooking and prep time: 10 minutes

Ingredients:

250g risotto (arborio rice)

3 garlic gloves (chopped)

1tbsp olive oil

2 vegetable stock cubes

1 beetroot (chopped finely)

2 bell peppers

1 handful of frozen peas

1 handful of baby spinach

1 lemon

1 onion (chopped)

 

Method:

  1. Fry the onions and peppers with olive oil in a pot at medium heat.
  2. Add the chopped garlic for a few minutes, then add the arborio rice.
  3. Add 2 stick cubes to 750ml of boiling water, then gradually add a ladle of stock to the risotto and keep stirring for about 25 minutes.
  4. Whilst stirring the risotto for 10 minutes, add the beetroot.
  5. Add the frozen peas and spinach when all the vegetable stock is absorbed and cook for a further few minutes.
  6. Take the pot off the heat and squeeze 1 lemon into the risotto and add salt and pepper for extra seasoning.
  7. Enjoy!
